everyday food made simple

As 2013 comes to a close and we welcome the arrival of 2014, let’s look back at all the fun things that happened this year:

2013 was the year of firsts…

First and foremost, this was the year I finally took the plunge and started my own food blog. I’m not sure when and how this obsession with food started, but if it weren’t for Brian’s encouragement to do this, SEF wouldn’t even exist. And thank you to all of you who have visited my little space on the internet – it’s been exciting to watch this site grow everyday! I’ve also had a lot of fun learning about food photography, baking, and food styling. It’s crazy to see how far my pictures have come since SEF started back in February. I still have a lot to learn but I’m excited to see what the future brings!

I participated in my first food blogger event this year – the Great Food Blogger Cookie Swap! It was such a fun event for a great cause… I’ll definitely be doing it again next year!

We went to Nelson’s in Stillwater and had ginormous ice cream cones. Pictured here, a “kids” sized cone is served with 5 generous large scoops of ice cream for less than $3 (if my memory is correct). I definitely recommend that place – there are so many different flavors to choose from!

Bentley turned one and his momma made him a homemade 2-layered cake

Shortly after his 1st birthday, Bentley got an anal gland abscess and had to wear the infamous cone of shame for the first time.

Bentley also enjoyed his first winter here in Minnesota! He really is a snow bunny at heart (his parents are not though).

We had our very first thanksgiving together, complete with a 15-lb turkey, homemade stuffing, bacon green beans, honey jalapeno corn bread, pumpkin cream cheese cupcakes, and mashed potatoes and gravy.

We also went to Seattle for the first time ever! Oh man oh man was I in food heaven! All the seafood, all the Taiwanese food… the ocean, the mountains, Pike Place Market…. I’m totally in love with that city – it feels like home. You can read all about our first trip there here. We actually loved the city so much that we went back for a second time as an anniversary present to ourselves. Maybe one day we’ll be able to move there and go shopping at Pike Place Market every Saturday morning…

I’ll be perfectly content if I can have donuts and coffee for breakfast every morning…

And as usual, we went to the Minnesota State Fair at the end of summer and ate a bunch of food.. you can read about my recap of my Fair experience here.

I also graduated from vet tech school this winter! It has really been a fun two years… I’ll miss my instructors and classmates, but I’m excited to go out to the real world and apply what I have learned in school! It’s kind of weird now that I have all this free time on my hands though… I must say, the class that surprised me the most theses two years was my large production animal class. I wasn’t (and till am not) a fan of large animals, but I sure had fun on our field trips to the farm!

We got to wrestle goats for blood draws, learn how to milk cows for the California Mastitis Test, run around with alpacas and much much more.

I’ll still always be a city girl at heart though.

And of course, we’ve went to plenty of sports games…

These are just a fraction of what happened in 2013 – I’m excited to see what 2014 brings!

Happy early New Year everyone!

If you don’t hear from me for a few days, don’t fret! Our refrigerator decided to die on us a few days ago, and our new one isn’t going to be delivered until sometime Friday. Yep, I open my freezer one morning and my ice cream has leaked through the carton and melted into a little puddle. Our milk is warm, and we have water in our ice cube trays..

You know what that means: no fridge = no food = no cooking = no posts! Sad, I know. I was just as sad when I realized we had to toss ALL of our food that was in the freezer and fridge (Brian didn’t want to take any chances). This included a few essential everyday supplies – milk, coffee creamer, eggs, yogurt, ICE CREAM… Oh man, it was a sad, sad day. All our groceries filled two and a half large kitchen garbage bags, and they’re currently residing in a little grocery cemetery at the end of our driveway. Not only do we not have any milk to drink, I also can’t make coffee because I don’t have any creamer! You have no idea how good a large cold glass of milk sounds right now.

You really don’t realize how much you rely on your refrigerator until you don’t have one anymore! How did people survive back in the day before fridges were even invented?!

On the brighter side of things, since we were already planning on doing some major kitchen renovation/upgrades next spring and getting new appliances were one thing on our list, we decided to buy a new stove/range while we were at it too. I think I might be more excited about this new oven I’m getting than the refrigerator – it’s a convection oven! Apparently it creates restaurant-quality desserts… well I guess I’ll just have to make something in it to try it out :)

I’ll be back when I finally get some fresh groceries in my new fridge! Until then, stay warm and enjoy the crisp fall weather before the snow falls!

Every year when the Packers come in town to play the Vikings, Brian and his little buddies have a little boys weekend they call the “Norsemen weekend”. Every year someone plans and makes t-shirts for everyone, then when the weekend finally comes around, they hang out, catch up on Saturday night.. then on Sunday, they tailgate all day and go watch the game at the Metrodome.

When my friends and I tend to either go shopping or go eat when we get together, Brian and his friends, well.. they watch football. I guess it’s what brings guys closer. Whatever works I guess.

About two months prior to this weekend, Brian said to me one day, “You know what you should do this year for our Norsemen trip? You can make us purple and gold cupcakes for tailgating!” So not only do I have to stay at home by myself all weekend, I have to make him cupcakes.

Doesn’t sound like such a good deal for me, if you ask me.

Well, as the weekend came closer, I decided what the heck – I’ve had a baking itch for a few weeks now, so not only would baking Vikings cupcakes satisfy my itch, it’d also be something nice to do for him and his buddies. Even though today would’ve been the only day I could sleep in all week, and despite the fact that I have a gazillion things to do for school, I decided to get up early and make cupcakes.

Just me, the kitchen, and Pandora. It truly was the best therapy.

And let me tell you, these cupcakes turned out to be exactly how I envisioned them to be!

I really should win a Wife Of The Year award for this.

Warning: lots and lots of pictures ahead!

Today we had our annual visit to the Minnesota State Fair! When we go to the Fair, I don’t buy any merchandise. I don’t go look at the exhibits. I don’t even go look at all the cute animals. My goal for the Fair has always been eating, and eating only.

Skyride

I’ve been waiting for this day the entire month of August, so much so that not only did we buy our discounted tickets (and our Blue Ribbon Book) from work a few months ago, I also made a list of foods I wanted to eat this year.

photo 1 copy

Now this isn’t your ordinary list, you guys. First I went on the official State Fair website and scrolled through the entire list of food vendors. I found all the foods I would like to try and added them to my list, and I wrote down their location. Lastly, they’re also organized in roughly three categories: new foods this year I’d like to try, our regulars, and those in the Blue Ribbon Book I want to have, complete with their corresponding coupon number. And if that’s not OCD enough, I typed it up on Microsoft Word… and the list ended up to be an entire page long. #NerdAlert!

Here’s a complete list (with pictures) of things we’ve had today.

We started out with the portobello mushroom bites from Minnesota Wine Country

photo 3

And just like every other year, we got some cheese curds from the Mouse Trap in the Food Building

photo 1

I tried out this year’s new food – Comet corn from the Blue Moon Dine-In Theater. These are basically caramel corn made with liquid nitrogen. They were good – super crunchy and fun to eat. The liquid nitrogen smoke just makes it that much cooler.

photo 3 copy

Walleye cakes from Giggle’s Campfire Grill were also on the agenda. Walleye, smoked salmon, wild rice with dipping sauce. Yum.

photo 2 copy 2

Jalapeno cheese corn dogs, another new Fair food this year. I was pleasantly surprised at how good these were. It’s a jalapeno and cheese infused corn dog dipped in spicy batter, served with sliced jalapenos and cheese sauce. It wasn’t too spicy, but had enough of a noticeable kick to make it tastier than a regular corn dog. I probably could’ve went back for another one. I’m glad I didn’t though.

Corndog

It was a hot day and all I wanted was ice cream…. we started out with an orange creamsicle float that was uhhhhmazing!

photo 4 copy

Then some sweet corn ice cream that I had to have again this year…

photo

…and we ended the day with some more ice cream! Izzy’s, an ice cream place owned and operated locally, came out with a new flavor this year for the fair – mini donut batter ice cream!

Izzy

Mini donut chunks + cinnamon + ice cream. Oh. My. Gah! Hands down, best ice cream at the Fair. I’d like a whole pint of that to-go, please.

I think I’ve had enough ice cream to last me a while though.

I wasn’t brave enough to try these though. I’ve never had Spam before, and Spam curds just don’t sound all that appetizing at the time. Maybe next year…

photo 1

Not only did we eat new foods this year, we also did something we’ve never done before at the Fair – we sat in the audience in the Kare 11 Barn during the 5 p.m. news!

Karebarn

Julie Nelson and Randy Shaver – two of my favorites!

And I got to meet the cardboard version of Sven!

Sven

When we came home and watched the news, we spotted ourselves in the audience.

photo 2

Yep, I sure looked pretty embarrassed in that last frame. Maybe going to the Kare Barn to sit through a live recording wasn’t such a good idea after all……

So I ended up not eating everything on my list, but maybe that’s better for our wallets and my body. I’m pretty sure I could’ve crossed off a few more things if we had stayed another couple hours more. I’m already looking forward to next year’s State Fair! I wonder what kind of new foods they’re going to create…… :)
